Apple has released several beta versions of macOS 10.15.1, and now the official release of this update has taken place. WatchOS 6.1 is available for all Apple Watch models, including first and second generation watches. An update to watchOS 6 was released in September, but initially it could not be installed on older models.

watchOS 6.1 adds watch support for the new AirPods Pro wireless headphones. On older Apple Watch models, most of the new features implemented in watchOS 6 appear.

You can install watchOS 6.1 on your watch using the Watch app on iPhone in the updates section.
